Peri Peri - or “piri piri,” meaning “pepper pepper” in Swahili - originated from the fiery blend of African bird’s eye chilli and Portuguese culinary influence. This bold, spicy marinade was born in Southern Africa during the Portuguese colonial era and has since become a beloved flavour across the globe. Traditionally used to marinate flame-grilled chicken, peri peri sauce delivers a smoky heat balanced with garlic, lemon, and herbs. With BBQ season in full swing, there’s no better time to recreate this iconic burger with our [MOCK]® Vegan Chicken Fillet. Smoky, spicy, and satisfying - this one’s made for summer.

Ingredients

[MOCK]® Chicken Fillets

Marinade

  • 2 tbsp olive oil
  • 2 tsp chilli flakes
  • 5 garlic cloves, minced
  • Juice of 2 limes
  • 1 tbsp smoked paprika
  • 2 tsp oregano
  • 1/2 tsp salt
  • Black pepper to taste

To serve

  • 4 burger buns
  • Lettuce
  • Sliced tomato
  • Sliced onion
  • Vegan cheese slices (optional)
  • Side of choice, such as fries, coleslaw or grilled corn on the cob

Preparation

Marinate the [MOCK]® Chicken Fillets

Combine all of the marinade ingredients in a bowl or box, and then place the [MOCK]® Chicken Fillets in the container and ensure they’re covered in the marinade.
Leave for at least 2 hours in the fridge to marinate.

Cook the [MOCK]® Chicken Fillets

Heat a griddle or large frying pan over a medium heat, then add the fillets.
Cook for 3-4 minutes each side, until they’re hot all the way through.
Increase the heat towards the end of cooking to achieve a slightly charred finish, if you like.
If using, add the vegan cheese slices a couple of minutes before the end of cooking, and cover fillets with a pan lid to help melt the cheese.

Plating

Construct the burger and add the sides of your choice.
