Teriyaki is a classic Japanese cooking style that originated in the 17th-century Edo period, combining “teri” (meaning glossy) and “yaki” (to grill or broil). Traditionally, meat or fish is glazed with a soy-based sauce and cooked to achieve a glossy, caramelised finish. Over time, it has become a globally recognised flavour profile, prized for its balance of sweet, savoury, and umami notes. In this dish, our tender and juicy [MOCK]® Chicken Pieces are finished in a rich teriyaki glaze and served over steamed rice - ideal for chefs looking to bring bold, Japanese flavour to meat-free menus.

Ingredients

Teriyaki Sauce

  • 240ml Japanese shoyu (soy sauce)
  • 110g dark brown sugar
  • 240ml mirin
  • 120ml sake

[MOCK]® Chicken Popcorn

To serve

  • Cooked Japanese white or brown rice

Garnish

  • Finely sliced springs onions
  • Black or white sesame seeds

Preparation

Prepare the teriyaki sauce

Mix the teriyaki sauce ingredients together in a small saucepan and bring to a boil over medium-high heat; reduce to a simmer, and cook until thickened enough to coat a spoon (around 20 minutes). Set aside to cool.

Prepare the [MOCK]® Chicken Popcorn

Deep-fry the [MOCK]® Chicken Popcorn from frozen at 180C for 2 min 45 seconds. Let rest. Toss with a few spoons of the teriyaki sauce, until well coated.

Plating

Place the teriyaki popcorn on top of a generous rice portion and top with your desired garnish.
