[MOCK]® Chicken Shish Tawook on Flatbread

Reinvent the classic Middle-Eastern Shish Tawook "skewered chicken" with our [MOCK]® Chicken Pieces. This beloved recipe has roots in the 13th century Ottoman Empire and moved through the Levant (modern-day Syria, Lebanon, Jordan, and Palestine). It features a tangy marinade with yogurt, citrus and spices, grilled to perfection on skewered chicken. Serve with your favourite flatbread, grilled onions and peppers, and enjoy!

Ingredients

Marinade

  • 125g plain vegan yogurt
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 3 garlic cloves, crushed
  • ½ tbsp tomato paste
  • ½ tsp paprika
  • ½ tsp cinnamon
  • ¼ tsp oregano
  • ¼ tsp ground ginger
  • ½ tsp salt
  • ⅛ tsp black pepper

[MOCK]® Chicken Pieces

Vegetables

  • 6 banana peppers
  • 1 medium red onion
  • ⅛ tsp za'atar

To serve

  • 4 portions flatbread

Garnish (optional)

  • Fresh lemon wedge
  • Fresh parsley leaves

Preparation

Marinate the [MOCK]® Chicken Pieces

Combine all the marinade ingredients. Reserve a few tablespoons for garnish. Add the [MOCK]® Chicken Pieces and coat thoroughly. Let sit for at least 30 minutes.

Prepare the vegetables

Wash and dry the banana pepper; peel and halve the onion. Coat all with oil, salt and roast on an outdoor or indoor grill for 5-7 minutes until cooked. Set aside the peppers. Loosen the onion layers, and toss with the zatar; set aside.

Prepare the [MOCK]® Chicken Pieces

Skewer the [MOCK]® Chicken Pieces and grill on medium heat until cooked, approximately 8-10 minutes.

Plating

Heat the pita bread on the grill. Place the skewers on the pita. Gently place the peppers and onion on the side. Garnish with fresh lemon, parsley and some marinade on the side.
